Chocolate French Toast with Easy Fruit Sauce
Now that the "The Cookie Lady" is "***Lela Cookie Lady", she's looking for special foods kids will like - okay, our new granddaughter, Isabella, has no teeth, but we all need to be prepared!

Chocolate French Toast

4 large eggs
1/2 c. milk or vanilla soy milk
2 Tbsp. sugar
1/4 tsp. salt
1 tsp. vanilla
16 slices white bread, brioche or challah
8 oz. chocolate bar or chocolate chips

Beat together the eggs, milk, sugar, salt and vanilla in a shallow pie plate. Place 2 oz piece of chocolate or some chocolate chips between 2 slices of bread. Using a 4 inch cookie cutter, trim the bread (or just cut the crusts off) and pinch edges together.

Dip bread into the egg mixture to saturate but not falling apart.

In a skillet melt 1 tablespoon butter, use as needed, cook sandwiches until golden.

Serve with maple syrup, fruit or the following Easy Fruit Sauce for an extra touch.

Easy Fruit Sauce

2 c. blueberries, fresh or frozen
1 c. peaches, fresh or frozen, sliced
1/2 c. frozen fruit juice concentrate or fresh squeezed orange juice
1 Tbsp. cornstarch
2 Tbsp. lemon or other juice

Place 1/2 cup frozen juice, 1 cup blueberries, 1/2 cup peaches into a saucepan - bring the mixture up to a boil.

Mix together 2 tablespoons juice with the cornstarch. Stir in to the hot sauce - cook until the mixture thickens and turns clear.

Add the rest of the fruit. Serve with French toast, over ice cream or some members of our family just eat it with more fruit, if there is any left.

Notes:

  • Banana slices or creamy (not crunchy!) peanut butter works well with chocolate in the french toast recipe, but this recipe also works very well if you substitute jelly or fruit for the chocolate.
  • Any combination of fruit will work, even dried fruit (cook a few minutes longer).
  • ***"Lela" is the diminutive for abuela, grandmother in Spanish.
