Devy's Passover Apple Cake

It has taken a few years, but I finally wangled this apple cake recipe out of my good friend, Devorah Gable. Devy's family and mine agree, it is fabulous! She says it is very easy, too!

Preheat oven to 325°.

Oil a 10" tube pan with a paper towel and vegetable oil. Dust oiled pan with cake meal.

Peel and cube

  • 5 apples
sprinkle with cinnamon and sugar, set aside.

Mix

  • 6 large or extra large WHOLE eggs
  • 2 c white sugar
Beat well.

Beat into the egg mixture

  • 3/4 c vegetable oil
Beat 5 minutes.

Stir into the wet ingredients

  • 1 3/4 c cake meal

Pour half of the cake batter into the prepared pan, pour the apples evenly over the batter, top with remaining cake batter. Run a knife through the two mixtures to swirl the apples slightly.

Bake cake at 325° for 1 hour and 25 minutes.

Cool completely in the pan. Run a knife or spatula around the sides of the pan; loosen the bottom of the cake from the tube in the same way. Lift off the tube onto a serving plate (an extra pair of helping hands is really good here).

This cake freezes well when wrapped well in heavy foil.
