1 c. butter at room temperature
2 c. sugar
3 c. flour
2 eggs at room temperature
1 1/2 tsp. real vanilla extract
1/2 tsp. baking powder
Preheat oven to 375°.
Cream butter and sugar in a large mixer bowl, beat about 5 minutes.
Add vanilla.
Add the eggs, one at a time, mix well.
Stir in flour and baking powder.
If the mixture seems too dry, add cold orange or apple juice or cold water, a tablespoon at a time, but no more than 2 tablespoons liquid.
Chill 2 to 4 hours.
Roll one quarter of the dough on a surface sprinkled with flour and sugar mixed together.
Roll the dough thin, 1/8" to 1/4" thick.
Cut with cookie cutters and decorate as desired (see note below).
Place on parchment lined cookie sheets and bake at 375° for 10 to 12 minutes.
Cool the cookies on a wire rack.
Notes:
- Recipe may be cut in half.
- We paint the cookies with egg yolk paint:
- Blend 1 egg yolk with 1/4 tsp. water.
- Divide mixture among several small dishes.
- Add food coloring to each.
- Paint cookies before baking.
- Check the cookies at 8 minutes because every oven is different.
