Jean McLenigan's Taco Pie
This recipe came to us from Helen, Molly, & Jimmy McLenigan's Mom, who says: "I'm a big fan of Bisquick, and my kids are big fans of tacos, which are off limits (of course!) while the braces are on. I came up with a tasty substitute for my taco-craving brace-faces."

1 lb. of taco meat combined with one package of dry taco seasoning mix (prepare following the instructions on the back of the package)
1 c. shredded cheese--cheddar, taco, or Mexican blend--whatever you like
1/2 c. Bisquick
1 c. Milk
2 eggs

Spray a 9" pie pan with Pam or other cooking spray. Spread prepared taco meat on the bottom and top with the shredded cheese. Mix the Bisquick, milk, and eggs together and pour the mixture over the meat and cheese.

Bake in a 400° oven for about 25 minutes, or until knife inserted in center comes out clean. Cut into wedges and serve.

We put sour cream on top, and a green salad on the side. All the flavor, but none of the crunch.

Serves 6.
